SLOW COOKER CHICKEN Makes 4 servings.
Chicken thighs and bell peppers topped with a mango sauce and served with rice and peanuts.
1 tsp grated lime peel
2 tbs cornstarch dissolved in 2 tbs water
1 1/2 tsp curry powder
2 tbs lime juice
1 red bell pepper, quartered, sliced
Chopped peanuts
Rice or couscous
1 mango, peeled, sliced
1/4 tsp each salt and pepper
2 tsp minced garlic
9 oz jar mango chutney
8 chicken thighs, skin removed
Place chicken and peppers in a slow cooker. Mix lime juice, chutney, garlic, curry powder, salt and pepper in a bowl, pour over chicken. Cover and cook on low 6 hours or until chicken is cooked through. Remove chicken and peppers to serving platter, stir in cornstarch mixture and mango. Increase heat, cook covered 15 min. or until slightly thickened. Stir in lime peel. Spoon sauce over chicken, SERVE with rice and peanuts...
