Slow Cooker Beef Soft Tacos

8 flour tortillas, warmed
1 avocado, diced
1 jalapeno pepper, seeded, thinly sliced
1/2 pineapple, peeled, cored, cut into pieces
1 tbs chili powder
1 large onion
1/2 cup cilantro or parsley
2 tbs lime juice
Salt and Pepper
1 1/2 pounds flank steak, cut crosswise into 4 pieces


CHOP 3/4 of the onion, refrigerate the rest. In a slow cooker, toss chopped onion, beef, chili powder, half the pineapple, and 1/4 tsp each salt and pepper. Cook covered until meat is tender and shreds easily, 8 hours on low or 5 hours on high.

WHEN beef has 25 min. left to cook, thinly slice remaining onion. In a bowl, toss onion, jalapeno, lime juice, remaining pineapple, and 1/4 tsp each salt and pepper. Fold in avocado and cilantro. Shred meat, then stir it into cooking liquid. Fill tortillas with beef mixture, top with pineapple salsa, then SERVE...
